Spotlight on sprouts!

I made a rather epic roast dinner yesterday, and for me the sides nearly always steal the show – like this easy little sprouts dish with a delicious maple syrup and balsamic vinegar dressing.

Here we* parboiled some sprouts for only about 5 mins, adding the leaves from the sprout stalk in the last couple mins. This was then refreshed under cold water to stop the cooking. In a separate pan, a pack of pancetta lardons were crisped up, with most of the fat drained off before chucking in the sprouts to fry off a little. A couple mins later a pouch of sweet roasted chestnuts were stirred through for seasonal nuttiness, then everything was tossed in a maple-balsamic dressing – simply made with 1 part balsamic vinegar to 2 parts maple syrup (I love the sweet, salty combo with the pancetta in this dish too!). A pinch of sea salt and black pepper later and this was ready in under 20mins. Maybe a little inspo for your festive dishes? ?

*…I say we as TBH Matt did most of the work on this one, since I was busy with work (and he’d be gutted if I took allll the )…!
