Sometimes you just can’t beat a good roast chicken ?
It’s been *roasting* here over the last few days so I’ve been rather lazy in the kitchen! …I picked this beautiful free range bird up from greendalefarmshop this afternoon and roasted it off with a few new potatoes to serve with a simple salad. The best bit? I softened some salted butter and mixed it with lots of herby za’atar; this was rubbed all under the skin alongside some slices of lemon for some serious flavour and juiciness. I’d totally recommend it, happy Sunday ?
