Lime and Coriander Sweetcorn Ribs ?
OK as much as I enjoyed these, I’d get someone else to cut them for you – jeeze it’s hard getting through the core of a corn?! Matt cut these in the end ? …then I smothered them in vegan aioli and baked them on gas 6/200c for a good half hour, maybe a bit longer as I really love a good char! Once they come out just toss with a little lime zest and fresh coriander – fun and tasty! Now I just need a BBQ to go to… happy Friday foodies ?
