Super Sticky Thai Spice Meatballs with Basmati Rice and Sesame Tenderstem ?

This dish is actually completely plant-based, so it’s vegan-friendly thanks to making a couple of swaps and using the delicious meatlessfarm mince.

In the spirit of Veganuary I’ve made 2 simple swaps to one of my go-to recipes to make it plant-based; Meatless Farm plant-based mince instead of sausage meat & agave syrup instead of honey. This one’s super easy & so flipping’ deeeelish! I’m genuinely impressed with the meatlessfarm plant-based mince; it’s super versatile, tastes fab & takes on additional flavour well. I actually think I’ll be incorporating this into many more of my meals as I’ve also noticed on the ingredients list there’s no palm oil! Something that often puts me off other vegan (and non-vegan) products ?

RECIPE (serves 2-3)
For the meatless meatballs:
400g meatlessfarm plant-based mince
1.5tsp Thai 7 Spice seasoning
1tsp fennel seed
1/2tsp black pepper
Pinch sea salt
Drizzle of oil to cook (I used a light olive oil)

– Combine the above into a bowl (except the oil) to form one large ball then break off pieces to make smallish meatballs. I made 22. I feel like you could easily overwork this, so I’d recommend working it just enough to shape them.

– Use a non-stick pan (I tried my cast iron & it didn’t work so well) & drizzle in a little oil. Add the meatballs. Let them sit for a min to start to start the browning process then rotate/shake to brown all other sides. Cook until piping hot, about 10mins. Meanwhile make the sauce.

For the sticky sauce:
(just double the quantities if you’d like more)
3tbsp agave syrup
3tbsp soy sauce
5tbsp water
1/2tsp cornflour
1tsp sesame seeds
Few drops sesame oil

– Combine the above into a small saucepan. Bring to the boil to thicken. Turn off the heat. Note: I found that the meatballs lose their crisp exterior if you add them to the sauce, so it’s best to keep them separate.

– To serve: add the meatballs to a bowl of fluffy basmati rice with veg of choice and a few drops of sesame oil. Generously drizzle over the sauce. Add extra garnishes as you like (coriander, chilli, spring onion etc. work well). Enjoy!
