[RECIPE] Swirl cake alert! ?

I love making these cakes, especially at the weekend as then you get a little treat for the working week ahead! It’s my standard swirl cake recipe, but this time I’ve gone for vanilla and cinnamon for a kinda Cinnabon vibe. Smother it in cream cheese frosting for something extra spesh ?

INGREDIENTS:
6oz baking margarine (I use bakewithstork)
6oz golden caster sugar (I used tateandlylesugars)
1.5tsp vanilla bean paste (I love nielsenmassey)
9oz self raising flour
1tsp baking powder
2 medium eggs (I used clarence_court)
2tbsp milk
2.5tsp sweet cinnamon (most of my store cupboard ingredients are sainsburys own)

METHOD
1 – preheat the oven to gas mark 5. Using a stand mixer (or your muscles!), cream together baking margarine, sugar and vanilla bean paste extract until pale.

2 – add the flour and baking powder, then the eggs and milk; mix to incorporate until light and fluffy.

3 – pop 1/3 of the cake mix into a separate bowl and stir in the cinnamon powder.

4 – line a loaf tin with baking paper and spoon in the cake mix. Alternate between the two mixes as you go. Periodically swirl the mixes together with your finger (or a spoon) to create a nice marbled effect when you cut the cake.

5 – place the cake mix into the pre-heated oven, middle shelf. This cake should take approx. 55mins to cook. Check from 45mins until a tooth pick comes out clean. Cool and serve.
