Bucatini pasta, smothered in a creamy mascarpone Madeira sauce ?
I’m usually a Marsala wine kinda girl when it comes to cooking, but I thought I’d go for a little Portuguese twist with some Madeira wine in this one. The sweet notes, paired with creamy mascarpone melted into a silky smooth sauce in this quick pasta dish. Ready in as long as it took my pasta to cook, this one is packed full of baby chestnut mushrooms, leeks and a helping of chicken, lightly fried in a little flour and oregano. How-to going in stories/highlights later if you want to give it a go (just leave out the chicken if you want a veggie version) ?
