BANGING SAUSAGE CASSEROLE WITH ROASTED VEGGIES:
It’s here in the UK! So that means sausages right?! Remember that sausage tray bake with the jammy tomatoes and tomatillos…well I actually turned it into a sausage casserole with all the roasted flavours of the tomatoes, garlic, red pepper and onions mingled together. I added some butter beans, a little chicken stock, chipotle chilli and paprika, as well as a little dash of liquid smoke to give a flame-cooked feel to the dish. After bubbling away until reduced, a fresh squeeze of lemon and a scattering of coriander finished it off; all that’s needed is a chunk of well-buttered bread for dippin’ ?
