A marble cake was one of the first cakes I learnt to bake, it was chocolate and vanilla and I remember being excited about how the inside would look because it’s always slightly different! I still am. Here I’ve gone for cinnamon as the other flavour in this one because I’m planning on eating this for breakfast all week and I don’t even care. My mum taught me a simple ratio that she’s always used for cakes (4oz sugar, 4oz butter, 6oz flour); I scaled it up for this loaf cake. This one won the poll on my stories today (sorry marmite lovers) so here’s recipe (also in my highlights!) Let me know if you give it a go! ?
6oz baking margarine (I use bakewithstork)
60z golden caster sugar (I love billingtonssugar)
1 tsp vanilla bean paste (I love nielsenmassey)
9oz self raising flour (I use homeprideflour)
1/4tsp baking powder
2 medium eggs (I tend to use thehappyeggco in cakes)
2tbsp milk
2.5tsp sweet cinnamon (most of my store cupboard ingredients are sainsburys own)
1 – preheat the oven to gas mark 5. Using a stand mixer (or your muscles!), cream together baking margarine, sugar and vanilla bean paste extract until pale.

2 – add the flour and baking powder, then the eggs and milk; mix to incorporate until light and fluffy.

3 – pop 1/3 of the cake mix into a separate bowl and stir in the cinnamon.

4 – line a loaf tin with baking paper and spoon in the cake mix. Alternate between the two mixes as you go. Before you bake it swirl your finger (or spoon) through the top and smooth over. This will help to create a nice marbled effect.

5 – place the cake into the pre-heated oven, middle shelf. This cake should take approx. 55mins to cook. Check from 45mins until a tooth pick comes out clean. Cool and serve.
