SHEET PAN SPAGHETTI WITH BALSAMIC GLAZE + SLOW-ROASTED TOMATOES:
In all honesty, I haven’t actually purchased pasta since lockdown as I used to keep a pretty well stocked store cupboard (‘used to’ because we’re eating our way through it!) – has the pasta situation got any better? …If you’ve got your hands on some, or made your own, this little dish is pretty hands-off, speedy (if you don’t count the slow roasting – which I don’t – as since I’m WFH anyway, these just went in on my lunch break, so they were ready to go at dinner) and pretty much just uses pantry ingredients and fresh tomatoes – swipe to see.
