Changing the leftover game with this one ?
Would you believe this meal was actually taco night the day before!? You wouldn’t guess with the refreshed spicing in this; ginger, coriander, tandoori masala, fenugreek and garam masala – plus a can of coconut milk and a squeeze of lemon!
I posted a few steps in my stories today but this is essentially the same recipe as my Tandoori Masala Coconut Curry with Chicken (the pic and recipe for that is a few rows back – ummmm I just counted…22 rows back so it maybe deserves a re-share!); only I used some leftover roast cauliflower and a can of chickpeas here instead of the chicken. Tonight I served it with some homemade buttery naan breads and extra chilli/lemon/coriander so people could tweak it to their liking. Happy Friday foodies ?
