NASI GORENG WITH CRISPY PORK CRACKLING:
Jazzing up lunch breaks since… (I don’t know how long we’ve been in lockdown)! ? …BUT when you’ve got some leftover rice my favourite thing to make is a take on nasi goreng, using whatever veg I’ve got to hand; today I added mushrooms, 1/2 red pepper and some spring onion. I pretty much always flavour mine with a combo of freshly grated ginger, garlic, soy sauce, Chinese 5 spice, red chilli, coriander and sesame oil. But we were also quids in tonight because I had some leftover pork crackling to adorn the top with, that and a jammy fried egg! You can watch me speed around the kitchen making this over on stories if you’re interested ?
