CREAMY CHICKEN, WILD GARLIC AND MUSHROOM PIE:
Phew! I’ve been busy in the kitchen today…I picked a load of wild garlic on Saturday so have been thinking of a few different dishes to make but since it’s the last day of British pie week I thought I’d better make my own with some of it! Here chicken, chestnut mushrooms and wild garlic come together in a creamy marsala sauce, all topped off with some buttery puff pastry for a quick and comforting pie! I actually portioned up a whole chicken for this as wanted different cuts for different meals and I wanted to make a stock (risotto coming soon!) – this is a really economic way of buying good quality chicken. I used the thigh, leg and wing meat in these beauties as they don’t dry out like breast can, plus they have way more flavour. How-to in highlights later ?
