BUTTERNUT, BLACK BEAN + CHORIZO PUFF PIES:
I’m trying to be creative with our WFH lunches and leftovers so I don’t get bored and snack! …I had some leftover roast butternut and black beans (from a veggie nacho night) – that were already spiced up with some chipotle and fajita seasonings – and I knew I had half a block of puff pastry in the fridge. So hand pies it was! I just added some lightly fried onions and chorizo to the mix, and a pinch of coriander for freshness, then created these little beauties; they’re crisp and delish + super easy to keep veggie too! How-to in stories/highlights ?
