WARM SWEET ‘N’ STICKY CHICKPEA + LENTIL ‘SALAD’ WITH SAUSAGES:
…All I knew this morning was that this was going to be a dish using a butternut squash, some sausages and lentils (I had some rather interesting Bijoux Verts Lentils gifted from epicurecooks that I really wanted to try – thank you!); but until I got into the kitchen I didn’t know what this dish was going to end up like! So I kinda made this one up as I went along tonight and it ended up as another easy tray bake situation. I had also found a rogue clementine, so I made a super nice dressing with that to coat everything in! I’m actually going to share the cook on my stories throughout this evening, then I’ll add it to my highlights – because this is something you’ve got to try! Don’t mean to toot my own horn, but WOW this one was tasty – rather easy to keep vegan/veggie friendly too (just lose the sausages!) ?
