| LEMON + HERB ROAST LAMB SHOULDER WITH MINT SAUCE:
Another gorgeously rustic British roast, served family-style! This time we went for lamb shoulder flavoured with a herby dressing & paired with colmansuk Mint Sauce for a fragrant note that cuts through the richness. Also served with my new way to make roast potatoes – panko crusted (amazingly crispy)! Grab my recipe below:

INGREDIENTS
(Serves 2-3)
For the lamb:
1kg lamb shoulder (room temperature)
2tbsp olive oil
1tbsp runny honey
2-3 sprigs fresh rosemary (chopped)
2-3 sprigs fresh thyme (chopped)
Juice from half small lemon
Pinch sea salt
Pinch black pepper
1 whole garlic bulb (sliced in half)
Half whole lemon (sliced into rounds)
250ml water
To serve: Mint Sauce

For the roast potatoes:
3-4 peeled & halved potatoes pp (I used a red-skinned variety)
2tbsp panko breadcrumbs
2tbsp olive oil
Pinch sea salt
Pinch black pepper

For the runner beans:
Roughly 80g runner beans pp (traditionally sliced)
Knob salted butter

METHOD
1 – pre-heat oven to gas mark 7 (220C). Prepare the rub for the lamb by combining all lamb ingredients, excluding the garlic bulb, sliced lemon half & water. Pour mixture over the lamb & massage in. Place slices of lemon on the base of an oven tray & pop the lamb on top. Add halved garlic bulb. Place into the oven, mid-shelf, for 30mins.

2 – after 30mins remove lamb from oven & turn down to gas mark 4 (180C). Pour the water over the lamb & cover completely with foil. Place back into the oven to cook low & slow for a further 2.5 hours (roughly 40mins per 500g + 40mins).

3 – once the lamb has been in the oven for 1.5 hours parboil the potatoes for 8-10 mins. Drain & ‘rough-up’ in the colander. Tip onto a baking tray & pour over olive oil, salt & pepper. Add the panko breadcrumbs & toss to coat. Turn oven up to gas mark 5 (190C) and pop into the oven, top shelf for 45mins-1 hour.

4 – remove lamb from oven & rest for 15mins (min) under foil. Optional: use the cooking juices to make a gravy at this point. Cook the runner beans by steaming for 5 mins; finish with butter. Serve everything with Colman’s Mint Sauce.
