Spring Fling Spaghetti ?
Named for it’s fresh and peppery flavours, plus the sun is shining so…! This lovely little number is the easiest dish to put together, I actually made this one with some leftover spaghetti for a WFH lunch, but freshly cooked would be fine (or any other pasta).
No recipe as such, but I just grated a clove of garlic into a rough tbsp of olive oil and lightly heated it to just cook through before Turing off the heat. Then I tossed in lots of sea salt and peppery (which is a mix of cracked black peppercorns, red pepper, green peppercorns and pimento – regular black pepper and salt would be fine) and a big handful of rocket that slightly softens in the residual heat. Served with a nice grating of parmesan and a little super seed topper mix. It’s fresh, light and tasty – perfect for a quick meal and it’s easy to adapt too (I’m thinking a few capers and a squeeze of lemon would be a nice addition next time!). Happy Monday foodies ?
