FRENCH ONION ORZOTTO
I hope everyone is doing OK. I’m trying to get through this weird time with a little creativity in the kitchen; I’ve got limited ingredients and a waste nothing attitude! My kitchen creativity doesn’t happen everyday, I think we’re all going through a time of emotional ups and downs – but I’m trying to stay positive and the sun is still shining. Today I was feeling creative, determined to find good use for some leftover French onion soup that Matt had kindly made yesterday…I found some orzo in the cupboard (absolute win) and we still have some parmesan and a few fresh herbs. So, after blitzing up the soup leftovers, I thought I’d try combining them with the orzo for a French onion ‘orzotto’. A handful of wild garlic and a squeeze of lemon later was this absolute deliciousness; I will definitely be doing this again, super yummy and satisfying…now it’s got me wondering what other soup leftovers could be used like this. I hope this helps inspire a little kitchen creativity – I’ll post the how-to on my stories later ?
