Bao Buns with Pork Belly ?
Well these were an absolute delight! Full of flavour, freshness and texture – I ate all three in probably about three minutes. Here’s some details:
? Pork belly: can’t remember the exact weight but this was patted dry, scored and sprinkled with salt and then cooked for 2 hours 15mins on gas 4/180C, then for 30mins at gas 6/200c. Rested for 20mins in the oven (turned off) before slicing).
? Coleslaw: carrot, spring onion, red cabbage, radish, splash of cider vinegar, light on the mayo, heavy on the coriander, squeeze of lemon.
? Bao bun: shop bought via M&S and heated in the microwave (I’ve had a busy day!).
? Extras: Mayo inside the bun jazzed up with garlic, lemon and black pepper. Crushed honey roasted peanuts, fresh cucumber, more coriander, black and white sesame seeds & a couple micro herbs.
