SLOW COOKED PORK BELLY WITH BOULANGÉRE POTATOES:
I thought it was about time for a roast! Whilst I was out wandering in the woods with the pup this lovely piece of pork belly cooked away low and slow in the oven… it was all tucked up with apples, onions and garlic; (which became the gravy) I served it with crispy boulangère potatoes (kind of like dauphinoise’s lighter cousin, thanks to stock instead of cream) and al dente runner beans. Easy cooking with maximum flavour… I think I’ll be sleeping well tonight ?
