Keeping things fresh and light with these Mediterranean style chicken skewers ?
I’ve made this flavour combo about 3 times in as many weeks and just serve with different sides and breads for an easy-delicious healthy meal (here we’ve got herby garlic butter potatoes, hob-flamed wraps and salads). INGREDIENTS & METHOD:
(Chicken marinade – serves 2)
4-6 bamboo sticks (soaked so they don’t burn)
400g chicken tenders/cut of choice
Juice and zest of 1/2 lemon
3tbsp good olive oil
1tsp dried oregano
1tsp pul biber (a type of non-spicy crushed red pepper seasoning)
1tsp black pepper1tsp black sesame seeds
Note: I do add a pinch of salt and an extra drizzle of olive oil but only just before grilling (as the salt will dry out the chicken during marination)
– slice chicken nice and thin (I use scissors).
– pop all other ingredients into a bowl and let marinade for a good few hours, covered in the fridge (this had about 6 hours).
– remove from the fridge about 30mins before you want to cook, then weave chicken onto skewers.
– cook under the grill (or you could totally BBQ them!) for about 5mins on each side until cooked through.
