BAKED COD WITH CHORIZO CRUMB, PANKO FRIES AND MUSHY PEA STYLE EDAMAME:
I was feeling too lazy to make a batter but still needed that little something extra for my fish and chips night – enter the chorizo crumb. SO GOOD. That good in fact you’ve already started making it your own (I’m looking at you hungrylittlebears ?). I baked my rather small piece of cod in parchment (with some lemon and home-grown tarragon) before topping with panko breadcrumbs that had been fried with chorizo (and a little lemon zest); served with mushy pea style edamame and my oven baked panko fries (recipe for those already in highlights – near the beginning!) Happy Friday foodies, I for one am glad it’s the weekend ?
