Pan Fried Gnocchi with Smoked Streaky Bacon and Baby Leeks ?

This is one of those dishes that just came together in a bit of a fridge raid. It’s another quick dish (we’re talking about 15mins) that takes very little effort to create something amazingly tasty out of just 3 key ingredients – no recipe but here’s how it’s made (serves 2):

? Chop 1/3 pack smoked streaky bacon and start to pan fry (remove any excess fat and keep to one side – it’s flavour and the gnocchi wants it).

? Slice and wash a couple leeks and add the to the pan with the bacon. Meanwhile cook the gnocchi according to instructions on the packet (basically boil for 2mins until they float, then they’re done).

? Drain the gnocchi and immediately add it to the bacon and leeks, drizzle in a little of the bacon fat and keep frying until they get a nice golden and lightly crispy outside (best to use a non-stick pan for this!).

? Season with salt and pepper (I’m still loving that blend of sea salt with cracked black peppercorns, red pepper, green peppercorns and pimento), a little squeeze of lemon and a big handful of parmesan cheese.

? Plate up with a little drizzle of nice extra virgin olive oil and a scattering of sunflower seeds.
