BAKED AUBERGINE WITH ZA’ATAR, GARLIC, TAHINI + LEMON:
New favourite side dish alert! These roasted aubergines are so packed full of fresh FLAVOUR your tastebuds will be tingling! Simply half a couple of aubergines, deeply score the flesh and generously rub with OLIVE OIL; mash up a couple of GARLIC cloves and push these into the gaps before liberally sprinkling with ZA’ATAR. Squeeze over some lemon and a good drizzle of TAHINI and add a pinch of sea salt. Give everything one last rub before cooking low and slow (gas 4 for a good hour) – when sticky, flat and soft they’ll be done to perfection. Great for BBQs, sarnies, salads and just about anything! ?
