Word association: if I say spinach…you say ricotta! ?
These lazy spinach, ricotta, parmesan and lemon stuffed pasta shells are nestled in a simple tomato sauce; flavoured with a subtle kick of smokey chipotle and aromatic oregano. Lazy because I didn’t bother pre-boiling them…the thought of trying to stuff floppy cooked pasta was so off-putting (dry pasta however is super easy to fill), so I just added extra water to the sauce and baked them straight in that. Easy, cheesy deliciousness with those extra crispy bits that are always mine! How-to saved in highlights if you fancy this one (you do, it’s glorious – I had leftovers for lunch today too) ?
