WOOD-FIRED CHICKEN KABOBS WITH ‘NDUJA PESTO:
I fired up the BBQ for some wood-fired grilling with this dish; deliciously tender chicken meets ‘nduja in a marinate that’s brimming with umami then cooked over wood for that smoky, slightly-charred flavour finish… I added some NEW sacla_uk No16 ‘Nduja Pesto (gifted) to natural yogurt for a fiery flavour twist that also creates a protective coating (the natural yogurt helps seal in the juices for a more tender result). After marinating for an hour, I skewered my chicken, alongside some cherry tomatoes, baby courgettes and red peppers, then grilled over wood until cooked. I brushed with a final coating of the ‘Nduja Pesto for a final flavour kick then served on homemade pizza dough flatbreads with salads ?

For the marinade:
1/2 jar of No16 ‘Nduja Pesto (available in sainsburys)
3 tablespoons natural yoghurt
