WILD GARLIC ARANCINI WITH MELTING MOZZARELLA MIDDLE:
Remember that wild garlic risotto? Well the leftovers became these gorgeous golden rice balls. The crisp exterior holds a centre with creamy rice that’s oozing with gooey mozzarella – is there anything better?! For more of a meal I served these with chargrilled chicken breasts and a simple marinara-style sauce. FYI: I pretty much only make risotto so I can make these the next day (how-to going in stories later). Delish ?
