WARM SMOKED MACKEREL + HORSERADISH POTATO SALAD:
So… I must confess, I thought I didn’t like mackerel, but Matt really does, so I thought I’d give it another go – turns out it’s actually really nice ?. I simply grilled some already smoked and peppered fillets then flaked them over a bed of mixed salad leaves with tomato and onion, then added fresh dill, coriander and parsley for a herby flavour kick. I also tossed some boiled potatoes in crème fraîche mixed with horseradish, spring onions, lemon and black pepper and added these to bulk out the dish (a great little side dish right there – ideal for BBQs!). The salad was served warm with a side of crusty bread. Surprisingly delicious… I hope you like it too!
