VEGGIE-PACKED BBQ SAUSAGE PASTA BAKE:
Yesterday’s bbq sausages become today’s pasta bake (and probably tomorrow’s lunch!) ? …I raided the fridge then sautéed off some chestnut mushrooms, red onion, garlic, spinach and a red pepper, then stirred in a tin of chopped tomatoes and a little chicken stock. I added the sliced leftover sausages, Italian seasoning, a few drops of smoky chipotle Tabasco, red chilli flakes and shredded fresh basil. Once my wholegrain pasta was cooked I mixed it through the veggie-packed sauce and covered the whole pan in mozzarella and parmesan cheeses, then baked until crispy and delicious! Happy start to the week foodies!
