THAI STYLE TOFU NOODLES WITH RED CURRY + COCONUT MILK:
Ooooh Monday you’ve been long and tough so I’m sharing a little meat free inspo from the archives tonight. For this quick veggie NOODLE dish I pressed firm tofu for 10mins or so, then coated it with corn flour mixed with Thai 7 spice to help it get nice and crisp (for me tofu needs to be crisp!). I fried it off with a little MISO, soy sauce and SESAME seeds… Meanwhile, my noodles mingled in some COCONUT milk with a big dollop of Thai red curry paste (aromatic AND spicy!) until cooked through. Then I tossed in a handful of edamame beans & mangetout, my crispy tofu and then finished it all off with some micro herbs and a drizzle of sesame oil ? …I’ll be making this again soon, so if you’re interested I’ll actually write down my ingredient ratios so I can share the recipe!
