TEMPURA BATTERED FISH FINGER SANDWICH WITH PANKO-CRUSTED FRIES:
Missing the pub? Yeah, that’s what I thought…silly question! But for now garden beers and gourmet pub grub recreations are the way to go at home! Like this rather delicious chunky tempura battered cod fish finger sandwich; using fish fingers from the youngsseafood Gastro range. I layered up some crusty farmhouse bread with my tartare style sauce (2tbsp crème fraîche, pinch black pepper, handful of chopped salted capers and 6 tart cornichons, a few delicate dill fronds, plus a little squeeze of lemon juice – all mixed together) and some fresh pea shoots. Served with my panko-crusted fries (recipe in highlights!) for a little twist on a classic. This is such an easy, quick and light meal; perfect for both a WHF garden lunch or alfresco dinner (fingers crossed for some more sunshine soon!) ?
