We picked up a couple of very nice dry aged rib-eye steaks from a local farm shop this weekend, so I cooked them up for tonight’s cosy dinner. They had 2 hours in the sous vide (54.5) before a hard sear in my cast iron pan. Served with potato rounds roasted with garlic, rosemary and Parmesan; rainbow chard with a little lemon and salt, plus a creamy mushroom and shallot sauce with plenty of black pepper. Absolutely delish! ?
