Shredded Chicken Burrito Bowl ?
If you caught my stories yesterday we had a very nice paprika roast chicken; and this is the leftovers ?
I simply jazzed up my leftover chicken (mainly shredded leg/thigh) with a little extra sweet smoked paprika, chipotle chilli flakes, garlic granules, a little honey and a good pinch of ‘pepper pit’ seasoning (a previously gifted blend of black pepper, onions, bell pepper, garlic, lemon, basil, coriander, cardamom & white pepper – it’s very lovely so I’ve tagged the brand). I lightly fried it with 1 red onion, a handful of cherry tomatoes and a little splash of chicken stock.
Served with fluffy basmati rice, smashed avocado (with lemon, salt, pepper, fresh coriander), lambs lettuce salad, chipotle salsa, a mini wrap (flamed, obvs.) and some salty tortilla chips ?
