Sausage, Ricotta and Apple Pizza ?

A few of you messaged me after my last pizza night to say I should try jamieoliver’s sausage and grape pizza… well I still don’t have any grapes so I decided to try apple instead – bear with me. My thinking was pork and apple go together aaaand cheese and apple go together… well this little number blew my mind, SO GOOD:

? Homemade dough, proved as normal (I have a dough recipe a scroll back in highlights) then balled up and rested overnight in the fridge – I find dough tastes much better 1-2 days later. Oven pre-heated as hot is at will go, then bases rolled out and ready to top with…

? Farm house sausages, removed from casing and fried until golden and crumbed – I added a pinch of fennel seeds and a good drizzle of honey.

? Good pizza sauce – Mutti is my go-to. Mozzarella, ricotta and APPLE! Approx. 12 mins cooking.

? Fresh basil, salt and peppery, parmesan, plus a nice drizzle of olive oil to finish.
