SAUSAGE AND PEACH TRAY BAKE WITH AMARETTO LIQUEUR:
Ok so this one divided the crowd a little when I shared the concept on my stories…BUT TRUST. These flavours taste SO GOOD together and that dash of amaretto liqueur gets all soaked up into the peaches where a little caramalisation takes place. Every bite is delish! ?
—— INGREDIENTS
(Serves 2-3)
6 good quality sausages (these were peppery Cumberland sausages)
2-3 almost ripe peaches (sliced into thick half moons)
5 sage leaves (a rough amount, mine were small)
2 red onions (sliced into thick half moons)
2 tbsp amaretto liqueur
Drizzle olive oil
Pinch sea salt
Pinch black pepper

METHOD
1 – pre-heat the oven (gas mark 6 / 200C). Place the peaches, sage and onions into a sheet pan. Add the sausages on top. Drizzle over the amaretto liquor and olive oil.
2 – roast until the sausages are golden and cooked through (about 45 mins). Turning occasionally whilst they cook.
3 – Done! I like to serve this shoved into brioche hot dog rolls or for more of a meal with buttery mash.
