S U M M E R L O V I N G ?
Rain or shine, I could eat this colourful Panzanella style salad all day long! It’s a delicious fresh mix of seasonal, super-ripe tomatoes, giant caper berries, basil, shallots and warm ciabatta (to soak up all those juices!). I dressed it with a little olive oil and balsamic vinegar too…but what did I pair it with? —> SWIPE to see!
– Higgidy sent me over some of their brand new ready-to-bake meals as part of the challenge that encourages us to be more adventurous with our fruit and veg – every day of the week. The Mac ‘n’ Super Green with a Crispy Kale & Pumpkin Seed Crumb was the perfect choice to go with my Tuscan-inspired salad side! This is half the portion plated (with a little mozzarella addition, because cheese) – stretching the meal into a lazy, but lovely lunch for two!
