RATATOUILLE LASAGNA WITH WILD GARLIC + RICOTTA ROLL UPS:
I didn’t really know what this was going to be when I started…I just knew I had some veggies that needed using up and the last of my first batch of foraged wild garlic. It’s become a mash up of maybe 3 different pasta dishes and it’s an absolute winner in my book! After roasting the veg, I made a quick tomato sauce with it straight in the roasting tray (less washing up). Then I combined the wild garlic with some spinach, ricotta and parmesan. In all honestly I sort of couldn’t be bothered to make a béchamel sauce for this as I’m planning on making that tomorrow anyway (for some sort of cauliflower / leek cheese thing); so rather than a traditional lasagne I rolled up the ricotta mix in strips of fresh lasagne. Everything was layered in a dish and topped with mozzarella and parmesan. Cooked for maybe 40mins until golden and bubbling. Delish. I’ll show you how I made this in my stores later ?
