I don’t know about you, but I needed a little colour in my life today! I’m trying extra hard to use up what I’ve already got and not waste a thing, but I did pick up the pork and chard from my local farm shop yesterday. To accompany this juicy fennel-crusted pork belly, I decided to go for some bright and nutrient-dense veg; I made a three cheese roasted cauliflower and leek bake, melting potato rounds (which were cooked UNDER the pork belly) and Swiss chard with lemon and a few flakes of dulse seaweed. All served with a side of some of my mum’s homemade apple sauce. Cosy, cosy ?
