POTATO RÖSTI CAKE TOPPED WITH SMOKED SALMON:
I kept it light & simple for my lazy Sunday morning breakfast with this CRISPY on the outside, SOFT in the middle potato rösti. I topped mine with lemony smoked salmon, horseradish-spiked crème fraîche, a little rocket, cucumber and salted capers. Happy Sunday! What are you up to? I’ve got some weeds to pull in the garden, some bananas just begging to be turned into a banana bread and a little recipe development later using ‘nduja… ❤️
