PORTOBELLO MUSHROOMS STUFFED WITH HONEY/SOY FLATTENED ‘MEATBALLS’:
Turns out portobello mushrooms stuffed with ground pork are DELICIOUS! I used the same Asian-inspired flavours as THOSE honey/soy meatballs (Thai 7 Spice, black pepper, a hint of fennel and sea salt) and also the same cooking method once stuffed (pan-fried on both sides for colour and flavour, then splashed in a little water and steamed them through). I also made a dressing of light soy sauce, runny honey, sesame oil and seeds to drizzle over at the end, alongside a fresh mix of red chilli and spring onions. Served with rice and steamed broccoli ?
