Pork Belly Roast with all the Trimmings ?
What a glorious sunny weekend it’s been over here! I’ve been thinking about doing a roast dinner but maybe something a little like this if the weather stays nice; it’s so colourful and tasty! So…what’s on my plate?
? Juicy fennel-crusted pork belly
? A dollop of my mum’s apple sauce
? Three cheese roasted cauliflower and leek bake
? Melting potato rounds (which were cooked UNDER the pork belly)
? Swiss chard with lemon and a few flakes of dulse seaweed
