PANKO-CRUMBED CHICKEN TRAYBAKE WITH HONEY/BALSAMIC/SESAME DRESSING:
Simple suppers to me mean minimal prep and a lot of sitting down ? ..for this easy sheet pan dinner I marinated some chicken in black-pepper-spiked crème fraîche for maybe 30mins. Whilst this was tenderising I chucked a few mini baby potatoes on a sheet pan with a drizzle of olive oil and a pinch of sea salt and got them into the oven, alongside a couple of chopped shallots and a whole (cut in half) bulb of garlic. Once marinated, the chicken was tossed around in a ziplock bag with some seasoned panko breadcrumbs (I added lemon zest, dried garlic, sea salt, black pepper and dried thyme) then this joined the potatoes in the oven, along with a few slices of lemon. These needed about 18-20mins to cook; after 10mins I poured a mix of honey (I used some gifted Lavish Lavender beehype_honey – thanks!) balsamic vinegar + sesame oil over the whole tray then returned it to the oven with a few pieces of asparagus. Once everything was cooked (about 8-10mins later) I sprinkled over some sesame seeds, then served it with warm ciabatta and salads + a side of the honey/balsamic/sesame dressing. YUMMY! ?
