Oozy Orzotto with Slow Roasted Tomatoes and Smoked Streaky Bacon ?

This was like a hug in a bowl last night; it’s pretty hands-off and quick to cook when it comes to the orzo pasta too (ideal for the working week!). No recipe as such in this post as to be honest I was just nosing around in the fridge for things that needed eating up (tomatoes, bacon, spinach, chicken stock were the main ingredients) BUT I’ve added some steps for this and a bolognese version to my highlights that should help! This is an easy dish to match to your tastes, make it vegan/veggie – it’s fab!

The key is to keep adding liquid and keep and eye on it – this isn’t a risotto, orzo takes only 8-10mins to cook max. I even add a splash more water just before serving (and a squeeze of lemon) to keep it ‘wet’, you don’t want it ‘sticky’ and you definitely don’t want to overcook it.

I need contrasts in my food, so as it’s such a soft dish, add some texture like garlic bread or fat croutons, maybe even a nice scattering of pangritata over the top (basically fried breadcrumbs with garlic – panko work well)! And for extra decadence you could stir in a dollop of mascarpone… ?
