One pot Chicken Sausages with Puy Lentils & Curly Kale ?

For when you want something cosy, but also kinda healthy and light this is the one. Especially with a wedge of toasted sourdough rubbed with garlic; which is how I ate mine. I loved the simplicity of this dish, all in one pot with lovely wholesome flavours…

? Here’s how I made it (serves 2 greedy humans with a few sausages leftover):

12 chicken chipolata sausages
1/2 lemon, thickly sliced
Drizzle of olive oil

? pre-heat oven to gas 6. Add the above to a cast iron skillet and cook uncovered for an initial 20mins, then add:

1/2 pack baby chestnut mushrooms, quartered
1 leek, washed and sliced

? continue to cook in the oven until the sausages are browned all over and cooked, another 15mins. Then pop the cast iron skillet on the hob, over low heat. Add:

250g pre-cooked lentils
1 garlic, grated
1/4 chicken stock melt
100ml (ish) water

? fold in the lentils and garlic first, then add the stock and liquid before moving onto:

Big pinch salt & peppery (or sea salt and pepper)
100g curly kale, washed
Drizzles of olive oil to finish

? To finish, remove the lemon slices from earlier and then season to taste. Pop the kale all over the top of the sausage/lentil mix and place on the lid. Steam for a couple mins until soft. Remove lid, fold in the kale and drizzle over a little olive oil. Enjoy!
