Move over Pesto Pasta… Baked Pesto GNOCCHI is in Town ?
Another busy working week ahead (with more decorating in-between!) so quick and easy meals like this are where it’s at. This one uses a packet of gnocchi, some pancetta lardons, a jar of pesto and a dollop of mascarpone. I baked the gnocchi and pancetta together then tossed in the flavours once it was all nice and crisp. I served it as a warm, herby salad with a sweet balsamic dressing and parmesan – it was fab! I’ve added some steps to highlights in case you fancy giving it a go (hint: you do ?).
