These little beauties are so easy…and that slow-roasted cherry tomato sauce is all jammy and divine (roasted tomatoes really don’t need much help; there is so much more flavour created when cooking like this!) – the best bit? This is a really versatile base recipe that can be turned into loads of other dishes (I’m thinking various pasta dishes, or with rice, on a pizza or a sub sandwich etc.). We just had these as part of a tapas style night tonight; served with a nice wedge of crusty bread to mop up all that goodness. How-to over on my highlights reel…let me know if you give them a go! ?
