MACKEREL NIÇOISE WITH HORSERADISH POTATOES:
Keeping things light tonight with a little twist on the niçoise; no eggies and I’ve swapped out the green beans for asparagus and gone for smoked mackerel instead of the tuna. The salads were tossed with a lemon/miso/sesame dressing and my potatoes in a combo of horseradish, crème fraîche, capers, parsley and chive. No boring salad here thanks; we ate this al fresco tonight and it was delish. Happy start to a new week foodies ?
