Lighter Panko Fries, Lemony Cod and Mushy Edamame ?
Happy FRYday! In this case my ‘fries’ are baked in a light coating of panko, sea salt with a hint of garlic and served with some butter-fried cod and lemon (how-to for panko fries over in highlights). I absolutely LOVE the mushy edamame for a twist on mushy peas; I keep a bag of frozen ones in the freezer so popped a couple handfuls into a saucepan with a splash of water then heated on low until defrosted. I drained off the water then added a couple tbsp of double cream, sea salt, black pepper, fresh parsley (mint is nice but Matt is not keen…) and a squeeze of lemon. I let it come to the boil then switched off the heat and blitzed with an immersion blender. You can adjust the consistency with more cream/water and the seasoning as you like ?
