Lemon & Poppy Seed Madeleines ?
With vanilla and almond extracts too! I made a big batch of these buttery little delights over the weekend, most of them went into our Mother’s Day gifts (along with a few espresso-spiked chocolate chip cookies – recipe for those dropping soon), but a few of them remained at home for, erm…testing purposes ? I love making these as the batter can (should) be made ahead of time, so when it comes to baking you just pipe them into buttered madeleine trays and bake – easy. I use a base recipe shared by jamesclark37 (which I *think* is on his website) and then just tweak the flavours depending on my mood!
