LEEK, POTATO AND HINT OF WILD GARLIC SOUP:
This is the most delicious leek and potato soup; elevated with a little wild garlic I found on our woodland walk today. Sometimes I’m blown away by how such simple, humble ingredients can make something so tasty (hence the double posting today!) ! I only added a pinch of seasoning (salt, pepper, dried dulse seaweed, mushroom ketchup) and some good quality stock (chicken in this case but you could keep it veggie…or vegan even!) then blended until smooth. Perfect for this rather gloomy Sunday. I’ll add a little how-to to stories/highlights for this one later ?
