I’ve got half a tin of tomatoes and an egg ?
And no I’m not showing off ? …this is a pre-food-shop-delivery fridge raid kinda dish with shakshuka-style vibes (that are by no means traditional).
In here I’ve got 1/2 red bell pepper, 1 large red spring onion and 1 garlic clove as the base (lightly fried until soft) then the tinned tomatoes as the sauce. I added some chipotle chilli flakes, onion seeds, sea salt and a pinch of ‘steak seasoning’ (black pepper, dried onion, mustard seeds, coriander seeds, chilli powder, cumin, oregano). Once it was bubbling I cracked in a large egg and popped the whole thing under the grill until the egg was ‘just’ done. Served with some heavily buttered sourdough toast and topped with dukkah for extra flavour and texture ?
